The start date is what the clock runs from, so it is worth filling in even for people trained long ago — it is the pair of dates that proves you were on time, not the training date alone.

Proving it, not just doing it

Record the start date alongside the training date. The training date alone shows the session happened; the pair shows it happened inside Wyoming’s window, which is the thing actually being asked.
